Creamy Chocolate Frosting

sift together and set aside:
  2 3/4 cup confectioner's sugar
  6 tbsp unsweetened cocoa

cream until smooth:
  6 tbsp butter

beat in alternately:
  sugar/cocoa mixture
  5 tbsp evaporated milk

blend in:
  1 tsp vanilla

beat until light and fluffy

adjust w/ milk or sugar as needed for dry vs. wet
